Recipe with ingredients from our Market

Strawberry Spinach Salad from Martha Stewart, prep time 10 mins., 2 servings (multiply for more servings)

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white balsamic vinegar
  • Coarse salt and freshly ground pepper
  • 4 cups lightly packed baby spinach
  • 6 ounces strawberries (1 1/2 cups) hulled and thinly sliced
  • 1/4 cups almonds (1 1/2 ounces), toasted and coarsely chopped
  • 1 tablespoon sesame seeds, toasted
  • 2 ounces feta, crumbled

Directions

  1. Whisk together oil and vinegar in a large bowl. Season with salt and pepper. Add spinach, strawberries, almonds, sesame seeds, and feta. Gently toss until spinach is evenly coated with dressing. Serve immediately.

We had a wonderful (damp & cool) first Market Day

How to Prepare . . .

Sauteed Scallions (Green Onions)

1 tb vegetable oil       5 bunches green onions        ½ teasp. grated lemon peel

¼ teasp salt                dash of ground pepper          2 radishes (optional)

 

In 12-inch skillet, heat vegetable oil until hot over medium-high heat. Add green onions, lemon peel, salt, and pepper and cook, stirring frequently, 2 minutes. Add 1/2 cup water and cook, stirring, 5 to 7 minutes longer, until green onions are tender and lightly browned and liquid evaporates. Toss with radishes if you like.
